A delightful and easy-to-make dessert perfect for the fall season, combining pumpkin and chocolate in a sandwich cookie format.

  • 1 cup pumpkin puree
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup chocolate chunks
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened

Instructions

  1. Preheat the air fryer to 350°F.
  2. In a bowl, mix together pumpkin puree, brown sugar, and granulated sugar until well combined.
  3. Add in softened butter and mix until smooth.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to the wet mixture and stir until just combined.
  6. Fold in chocolate chunks.
  7. Drop tablespoons of dough onto parchment paper and place in the air fryer basket.
  8. Air fry for 10-12 minutes or until golden brown.
  9. Remove from air fryer and let cool before sandwiching with additional chocolate or frosting if desired.
