Baked Rigatoni with Spinach and Ricotta is a delicious and easy-to-make comfort dish that combines the rich flavors of cheese, spinach, and pasta.

  • 12 ounces rigatoni pasta
  • 2 cups fresh spinach
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 jar (24 ounces) marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the rigatoni according to package instructions until al dente, then drain.
  3. In a large bowl, combine the cooked rigatoni, spinach, ricotta cheese, garlic powder, salt, and pepper.
  4. Spread a layer of marinara sauce in a baking dish, then add the rigatoni mixture on top.
  5. Pour the remaining marinara sauce over the pasta and sprinkle mozzarella and Parmesan cheese on top.
  6. Bake for 25-30 minutes or until the cheese is melted and bubbly.
  7. Allow to cool for a few minutes before serving.
