A delicious recipe for caramelized butternut squash topped with creamy ricotta and a sweet cranberry-honey drizzle.

  • 1 medium butternut squash
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ricotta cheese
  • 1/4 cup dried cranberries
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the butternut squash into cubes.
  3. Toss the squash with olive oil, salt, and pepper.
  4. Spread the squash on a baking sheet and roast for 25-30 minutes, or until tender and caramelized.
  5. In a small bowl, mix the cranberries and honey.
  6. Once the squash is done, top with ricotta and drizzle with the cranberry-honey mixture.
