Delicious caramelized sweet potato bites topped with rich brown sugar marshmallows and crunchy pecans for a perfect indulgent treat.

  • 2 large sweet potatoes
  • 1/4 cup brown sugar
  • 1/2 cup marshmallows
  • 1/2 cup pecans, chopped
  • 2 tablespoons butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes.
  3. In a bowl, toss sweet potatoes with butter, brown sugar, cinnamon, and salt.
  4. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes.
  5. Add marshmallows and pecans to the sweet potatoes and return to the oven for an additional 5-10 minutes until marshmallows are golden.

Notes

  • For extra crunch, toast the pecans before adding.
