  • 1 cup chopped lobster meat
  • 1 cup diced scallops
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 4 tablespoons butter
  • 1/2 cup all-purpose flour
  • 2 cups seafood stock
  • 1 teaspoon Old Bay seasoning
  • 1 cup shredded cheddar cheese
  • 1 package refrigerated pie crusts

Instructions

  1. Preheat the oven to 425°F.
  2. In a large skillet, melt the butter over medium heat. Add the onion, celery, and carrots; cook until softened.
  3. Stir in the flour and cook for 1 minute.
  4. Add the seafood stock and Old Bay seasoning, and bring to a simmer.
  5. Remove from heat and stir in the shrimp, lobster, scallops, and cheddar cheese.
  6. Roll out the pie crust in a pie dish, then fill with the seafood mixture.
