A delicious and easy cheesy chicken enchilada casserole perfect for weeknight dinners.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (15 oz) enchilada sauce
  • 1 cup sour cream
  • 3 cups shredded cheese
  • 1 cup corn
  • 1 cup black beans
  • 8 tortillas

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the chicken, enchilada sauce, sour cream, corn, and black beans.
  3. Layer the bottom of a baking dish with tortillas.
  4. Spread half of the chicken mixture over the tortillas.
  5. Sprinkle with a third of the cheese.
  6. Repeat the layers, finishing with tortillas and cheese on top.
  7. Bake for 30 minutes or until cheese is melted and bubbly.

Notes

  • For extra flavor, add spices such as cumin or chili powder.
  • Garnish with chopped cilantro or green onions before serving.
