- 2 cups cooked chicken, shredded
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 package cornbread mix
- 1 egg
- 1/3 cup milk
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix the shredded chicken, corn, black beans, diced tomatoes, and half of the cheese.
- Spread this mixture in a greased baking dish.
- In another bowl, prepare the cornbread mix as per package instructions; stir in the egg and milk.
- Pour the cornbread mixture over the chicken mixture.
- Bake in the oven for 20-25 minutes or until the cornbread is golden brown.
- Sprinkle the remaining cheese on top and return to the oven for another 5 minutes until melted.
- Let cool slightly before serving.
Notes
- For a spicier version, add jalapeños to the chicken mixture.
