Chile Relleno Soup

Warm and hearty, this Chile Relleno Soup combines the flavors of turkey bacon and chicken ham for a comforting dish.

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 2 green chiles, roasted and chopped
  • 1 cup diced tomatoes
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Remove and chop the bacon, leaving the drippings in the pot.
  3. Add onions and garlic to the pot and sauté until softened.
  4. Stir in the chicken ham, green chiles, and diced tomatoes.
  5. Add the chicken broth and spices, bringing to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Serve hot, garnished with the chopped turkey bacon.

Notes

  • For a spicier version, use jalapeños instead of green chiles.
  • This soup can easily be made vegetarian by omitting the bacon and chicken ham.
