4 slices turkey bacon
1 cup diced chicken ham
1 onion, chopped
2 cloves garlic, minced
4 cups chicken broth
2 cups diced tomatoes
2 roasted poblano peppers, chopped
1 teaspoon cumin
1 teaspoon smoked paprika
1 bay leaf
1 cup shredded cheese (optional)
Salt and pepper to taste
Instructions
In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
In the same pot, add the onion and garlic, cooking until softened.
Add the chicken ham, chicken broth, tomatoes, poblano peppers, and spices.
Bring to a simmer and cook for 20 minutes.
Remove the bay leaf, adjust seasoning, and serve hot, garnished with crumbled turkey bacon and cheese if desired.
