  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press mixture into the bottom of a greased baking dish.
  3. In a large bowl, beat the cream cheese until smooth. Add pumpkin puree, sugar, and vanilla extract; mix until well combined.
  4. Add eggs one at a time, mixing on low speed after each addition. Mix in pumpkin pie spice and cocoa powder until just combined.
  5. Pour the filling over the crust and smooth the top.
  6. Bake for 30-35 minutes, or until the center is set. Let cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, use dark chocolate cocoa powder.
  • Can be garnished with whipped cream or chocolate drizzle.
