- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 teaspoon pumpkin pie spice
- 1/2 cup cocoa powder
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press mixture into the bottom of a greased baking dish.
- In a large bowl, beat the cream cheese until smooth. Add pumpkin puree, sugar, and vanilla extract; mix until well combined.
- Add eggs one at a time, mixing on low speed after each addition. Mix in pumpkin pie spice and cocoa powder until just combined.
- Pour the filling over the crust and smooth the top.
- Bake for 30-35 minutes, or until the center is set. Let cool, then refrigerate for at least 4 hours before serving.
Notes
- For a richer flavor, use dark chocolate cocoa powder.
