  • 1 pound smoked sausage
  • 8 ounces penne pasta
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 1 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 onion, chopped
  • 3 cloves garlic, minced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and cook until translucent.
  2. Add minced garlic and sliced sausage, cooking until the sausage is browned.
  3. Stir in Cajun seasoning, then add the chicken broth, diced tomatoes, and pasta.
  4. Bring to a boil, then reduce heat and cover, simmering until pasta is al dente.
  5. Stir in heavy cream and Parmesan cheese, cooking until heated through.
  6. Season with salt and pepper to taste before serving.
