  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, cooked and chopped
  • 3 cups egg noodles
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • Salt and black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery; sauté until soft.
  2. Add the garlic and cook for an additional minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the shredded chicken, turkey bacon, and egg noodles. Cook until noodles are tender.
  5. Reduce heat and stir in the heavy cream and thyme. Season with salt and black pepper.
  6. Simmer for 5 minutes, then serve hot.
