  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (28 ounces) can crushed tomatoes
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef, onion, and garlic. Cook until meat is browned and onions are translucent.
  2. Pour in chicken broth and crushed tomatoes. Stir in Italian seasoning and bring to a boil.
  3. Add broken lasagna noodles and cook until tender, about 10-12 minutes.
  4. In a bowl, mix ricotta cheese with some salt and pepper.
  5. Serve the soup hot, topped with a dollop of ricotta, shredded mozzarella, and fresh basil.
