Creamy Sun-Dried Tomato Shrimp

A delicious blend of creamy sun-dried tomatoes, succulent shrimp, and crispy turkey bacon.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 ounces sun-dried tomatoes, chopped
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup heavy cream
  • 1 teaspoon garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh basil, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add garlic and cook until fragrant, about 1 minute.
  3. Stir in shrimp and cook until pink, about 3-4 minutes.
  4. Add sun-dried tomatoes and turkey bacon, stirring to combine.
  5. Pour in the heavy cream and bring to a simmer.
  6. Add Parmesan cheese, mixing until melted and smooth.
  7. Season with salt and pepper, and stir in fresh basil before serving.

Notes

  • For a lighter version, replace heavy cream with Greek yogurt.
  • Serve over pasta or rice for a complete meal.
