  • 4 slices turkey bacon
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 cup chopped green onions

  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil the baby potatoes until fork-tender, then drain and let cool slightly.
  3. Smashed the potatoes gently with a fork or your hand and place them on a baking sheet.
  4. Crisp the turkey bacon in a pan, then chop and set aside.
  5. Drizzle the smashed potatoes with olive oil, seasoning with salt, pepper, and garlic powder.
  6. Bake the potatoes in the oven for about 25-30 minutes until crispy and golden.
  7. In a bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, and green onions.
