Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cups egg noodles
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the chicken broth, carrots, celery, onion, thyme, bay leaf, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the crockpot.
  5. Add the egg noodles and cook for an additional 30 minutes.
  6. Serve and enjoy!
