- 8 ounces elbow macaroni
- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon thyme, dried
- 2 cups sharp cheddar cheese, shredded
- 1 cup Gruyère cheese, shredded
- 2 cups milk
- 3 tablespoons flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat oven to 350°F (175°C).
- Cook the macaroni according to package instructions. Drain and set aside.
- In a large skillet, cook turkey bacon until crispy. Remove and crumble.
- Add olive oil and onions to the skillet; cook until caramelized.
- Stir in garlic and thyme, cooking for an additional minute.
- In a separate saucepan, melt butter over medium heat. Whisk in flour to create a roux, then gradually whisk in milk until smooth.
- Add cheese, salt, and pepper to the sauce until melted and creamy.
- Combine macaroni, onion mixture, and cheese sauce in a large bowl. Stir in crumbled bacon.
- Transfer to a baking dish and bake for 20-25 minutes until bubbly.
Notes
