  • 8 ounces elbow macaroni
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme, dried
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 2 cups milk
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions. Drain and set aside.
  3. In a large skillet, cook turkey bacon until crispy. Remove and crumble.
  4. Add olive oil and onions to the skillet; cook until caramelized.
  5. Stir in garlic and thyme, cooking for an additional minute.
  6. In a separate saucepan, melt butter over medium heat. Whisk in flour to create a roux, then gradually whisk in milk until smooth.
  7. Add cheese, salt, and pepper to the sauce until melted and creamy.
  8. Combine macaroni, onion mixture, and cheese sauce in a large bowl. Stir in crumbled bacon.
  9. Transfer to a baking dish and bake for 20-25 minutes until bubbly.

Notes

  • For extra flavor, add a sprinkle of Parmesan cheese on top before baking.
  • This dish can be made ahead and refrigerated before baking.
