8 ounces lasagna noodles
4 slices turkey bacon
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 pound ground turkey
4 cups chicken broth
28 ounces crushed tomatoes
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
1 cup heavy cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
2 cups fresh spinach
Instructions
Cook the lasagna noodles according to package instructions. Drain and set aside.
In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and chop into pieces.
Add the onion and garlic to the pot. Sauté until the onion is translucent.
Add the ground turkey to the pot, breaking it up as it cooks until browned.
Pour in the chicken broth and crushed tomatoes. Stir in the Italian seasoning, salt, and pepper. Bring to a simmer.
Add the cooked lasagna noodles, heavy cream, mozzarella, and Parmesan cheese. Stir until the cheese is melted and the soup is creamy.
Fold in the fresh spinach and cook for an additional minute until wilted. Serve hot, garnished with chopped turkey bacon.
