1 pound turkey bacon
1 onion, diced
3 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
4 cups chicken broth
1 tablespoon Italian seasoning
10 lasagna noodles, broken into pieces
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil, for garnish
Instructions
In a large pot, cook the turkey bacon until crispy. Remove and crumble.
Add the onion and garlic to the pot and sauté until softened.
Stir in the crushed tomatoes, chicken broth, and Italian seasoning.
Bring to a simmer and add the broken lasagna noodles.
Cook until noodles are tender, about 10-12 minutes.
Remove from heat and stir in the ricotta cheese.
Serve hot, topped with mozzarella, Parmesan, and crumbled turkey bacon. Garnish with fresh basil.
Notes
For extra flavor, add red pepper flakes to the soup.
Feel free to substitute ground turkey for the turkey bacon.
