  • 2 medium eggplants
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants lengthwise into thin strips and brush them with olive oil.
  3. Grill or roast the eggplant slices until tender.
  4. In a bowl, mix ricotta, spinach, Parmesan, garlic powder, salt, and pepper.
  5. Place a spoonful of the mixture on each eggplant slice and roll them up.
  6. Spread marinara sauce in a baking dish and arrange the roll-ups seam-side down.
  7. Top with additional marinara sauce and bake for 25 minutes.
