  • 2 cups raspberries
  • 1 1/2 cups cream cheese
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  3. In a separate bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and lemon juice.
  6. Fold in raspberries and pistachios gently.
  7. Pour the cheesecake mixture over the crust.
  8. Bake for 45 minutes or until the center is slightly jiggly.
