  • 2 tablespoons olive oil
  • 2 leeks, sliced
  • 1 cup oyster mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated parmesan cheese

Instructions

  1. Cook fettuccine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add leeks and sauté until they are caramelized, about 10 minutes.
  3. Add oyster mushrooms and garlic to the skillet, cooking until the mushrooms are tender.
  4. Pour in vegetable broth and heavy cream, stirring to combine. Season with salt and pepper.
