A simple and delicious recipe for Green Enchiladas filled with a creamy chicken and cheese mixture.

  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese
  • 1 cup green enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the shredded chicken, cream cheese, green enchilada sauce, cumin, garlic powder, onion powder, and cilantro until well combined.
  3. Fill each tortilla with the chicken mixture and roll them up.
  4. Place the rolled tortillas seam-side down in a baking dish.
  5. Pour additional green enchilada sauce over the top and sprinkle with shredded cheese.
  6. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly.

Notes

  • Serve with sour cream and more cilantro for garnish.
