  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 limes, juiced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 ripe avocado, diced
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 cup jasmine rice
  • 1 can coconut milk
  • 1 cup water

Instructions

  1. Marinate the salmon fillets with olive oil, lime juice, garlic powder, cumin, and salt for at least 30 minutes.
  2. While the salmon is marinating, prepare the coconut rice by combining jasmine rice, coconut milk, and water in a saucepan. Bring to a boil, then reduce heat and simmer until rice is cooked.
  3. Heat a grill or grill pan over medium heat. Cook the salmon for 4-5 minutes on each side until fully cooked.
  4. In a bowl, combine diced avocado, mango, red onion, and cilantro to make the salsa.
  5. Serve the salmon on a bed of coconut rice topped with the avocado-mango salsa.
