  • 2 medium zucchinis
  • 1 pound ground beef
  • 1 cup shredded cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef and onion over medium heat until the beef is cooked through.
  3. Add garlic and diced tomatoes to the skillet and simmer for about 5 minutes.
  4. Slice the zucchinis in half lengthwise and scoop out some flesh to create a boat.
  5. Fill each zucchini boat with the beef mixture and top with shredded cheese.
  6. Place the filled zucchinis on a baking sheet and bake for 25-30 minutes until the zucchinis are tender.
  7. Sprinkle with Italian seasoning, salt, and pepper before serving.
