A comforting and healthy take on broccoli cheddar soup featuring turkey bacon for added flavor.

Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon flour (optional, for thickening)

Instructions

  1. In a large pot, heat olive oil over medium heat and add turkey bacon. Cook until crispy.
  2. Add onion and garlic, cooking until onion is translucent.
  3. Add broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. If using, sprinkle flour and stir to thicken. Add milk and cheese, stirring until melted.
  5. Season with salt and pepper before serving.

Notes

  • For a creamier soup, blend part of the soup and stir it back in.
  • Feel free to add other vegetables like carrots or cauliflower.
