  • ½ cup chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix chocolate cookie crumbs with melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In another bowl, beat the cream cheese and sugar together until smooth.
  5. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  6. Fold in the sour cream until fully incorporated.
  7. Pour the cream cheese mixture over the prepared crust.
  8. Bake for 55-60 minutes or until set and slightly jiggly in the center.
  9. Let the cheesecake cool, then refrigerate for at least 4 hours or overnight.
  10. Before serving, top with cherry pie filling and chocolate shavings.
