A delicious and nutritious high-protein broccoli cheddar soup made with savory turkey bacon.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add turkey bacon and cook until crispy. Remove and chop.
  2. Add onion and garlic to the pot, sauté until translucent.
  3. Stir in broccoli and cook for a few minutes. Pour in chicken broth.
  4. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  5. Use an immersion blender to blend the soup until smooth.
  6. Stir in cheese, milk, salt, pepper, and cooked turkey bacon. Heat through before serving.

  • This soup can be made ahead and stored in the fridge for easy meals.
