This High Protein Lasagna Soup combines the rich flavors of traditional lasagna with a healthier twist using turkey bacon and chicken ham.

  • 1 pound ground turkey
  • 4 ounces turkey bacon
  • 1 cup chicken ham, diced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 cups lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon Italian seasoning
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic; sauté until softened.
  2. Add the ground turkey and turkey bacon to the pot, cooking until browned.
  3. Stir in the crushed tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
  4. Add the broken lasagna noodles and simmer for about 10-15 minutes, or until noodles are tender.
  5. Stir in the chicken ham and ricotta cheese until well combined.
  6. Serve hot, topped with shredded mozzarella cheese.
