  • 1 cup breadcrumbs

  • 1 teaspoon Italian seasoning

  • 8 cups chicken broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cups baby spinach
  • 1 cup small pasta (like acini di pepe)

Instructions

  1. In a large bowl, mix together the ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Form into small meatballs.
  2. In a large pot, heat the chicken broth over medium heat. Add the diced onion, carrots, and celery and cook until softened.
  3. Add the meatballs to the pot and simmer until cooked through, about 10-15 minutes.
  4. Stir in the pasta and cook according to the package instructions until al dente.
  5. Finally, add the spinach and cook briefly until wilted.
  6. Serve hot, garnished with additional Parmesan cheese if desired.
