1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¾ cup granulated sugar
½ cup brown sugar
½ cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1 cup mashed ripe bananas
1 cup crushed pineapple, drained
½ cup chopped walnuts
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
In another bowl, mix the granulated sugar, brown sugar, oil, eggs, and vanilla until well combined.
Stir the banana and crushed pineapple into the wet mixture.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the walnuts and pour the batter into the prepared loaf pan.
Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
Notes
For best results, use very ripe bananas for maximum flavor.
