1 tablespoon olive oil
1 cup chopped onion
2 cloves garlic, minced
1 cup chopped carrots
1 cup chopped celery
1 can (14.5 ounces) diced tomatoes
4 cups vegetable broth
1 can (15 ounces) cannellini beans, drained and rinsed
1 cup green beans, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
1 cup pasta (such as small shells or elbow macaroni)
Salt and pepper to taste
2 cups fresh spinach or kale
Instructions
Set the Instant Pot to sauté mode and add olive oil. Once hot, add onion and garlic; sauté until soft.
Add carrots, celery, diced tomatoes, vegetable broth, cannellini beans, green beans, oregano, basil, salt, and pepper. Stir to combine.
Close the lid and set the Instant Pot to manual high pressure for 4 minutes.
Once the cooking cycle is complete, quickly release the pressure. Open the lid and stir in the pasta and spinach or kale.
Set the Instant Pot to sauté mode again, and cook for 5-7 minutes until the pasta is cooked. Adjust seasoning as needed.
Serve hot and enjoy your hearty minestrone soup!
Notes
For a thicker soup, use less broth or add more pasta.
Experiment with different vegetables based on what you have available.
