  • 1 pound chicken thighs, boneless and skinless
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 cup water
  • 1 tablespoon vegetable oil
  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 1/4 cup chopped peanuts, for garnish

Instructions

  1. In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, and water until smooth.
  2. Heat vegetable oil in a skillet over medium heat and add chicken thighs. Cook until browned and cooked through.
  3. Add broccoli and carrots to the skillet and stir-fry for about 5 minutes.
  4. Pour the peanut sauce over the chicken and vegetables. Cook for an additional 2-3 minutes until everything is coated and heated through.
