A delicious twist on classic meatloaf featuring chicken and flavorful garlic parmesan.

Ingredients

  • 2 pounds ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup minced garlic
  • 1/2 cup chopped parsley
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 6 strips turkey bacon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, egg, salt, pepper, and Italian seasoning.
  3. Mix until well combined.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
  5. Wrap the turkey bacon around the top of the meatloaf.
  6. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C).
  7. Let it cool for a few minutes before slicing.

Notes

  • Serve with mashed potatoes or a fresh salad.
  • For a spicy kick, add red pepper flakes to the mixture.
