1/4 cup coconut flour
1/2 cup granulated erythritol
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup diced apples (unsweetened)
1/4 cup sugar-free caramel sauce
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
In another bowl, mix the melted butter, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until combined.
Fold in the diced apples and half of the caramel sauce.
Shape the dough into scones on a baking sheet lined with parchment paper.
Drizzle the remaining caramel sauce over the scones.
Bake for 20-25 minutes or until golden brown.
