  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a large pot, sauté onions, garlic, and bell pepper until soft.
  2. Add chicken breasts, broth, diced tomatoes, cumin, chili powder, and salt.
  3. Bring to a boil, then reduce heat and simmer for 20-25 minutes until chicken is cooked through.
  4. Remove chicken, shred it, and return it to the pot.
  5. Add lime juice, avocado, and cilantro just before serving.
