Ingredients

  • 4 cups crushed tomatoes
  • 1 cup heavy cream
  • 1/2 pound turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add turkey bacon and cook until crispy.
  3. Pour in crushed tomatoes and vegetable broth, stir well.
  4. Season with Italian seasoning, salt, and pepper. Let it simmer for 20 minutes.
  5. Remove from heat, blend the soup until smooth, then stir in heavy cream.
  6. Return to heat briefly to warm through, serve hot.
