4 slices turkey bacon
1 cup chicken ham, diced
1 medium onion, chopped
2 cloves garlic, minced
2 medium carrots, diced
2 stalks celery, diced
1 can (14 oz) diced tomatoes
4 cups vegetable broth
1 can (15 oz) cannellini beans, drained and rinsed
1 cup green beans, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 cup pasta (small shape)
2 cups fresh spinach
Instructions
In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
Add the onion, garlic, carrots, and celery to the pot. Sauté until the vegetables are tender.
Add the chicken ham and cook for an additional 2 minutes.
Stir in the diced tomatoes, vegetable broth, cannellini beans, green beans, oregano, and basil. Bring to a boil.
Add the pasta and cook according to package instructions until al dente.
Stir in the fresh spinach and cooked turkey bacon. Season with salt and pepper to taste.
Serve hot, garnished with additional spinach if desired.
Notes
This soup can be easily customized with your favorite vegetables.
For a vegetarian version, omit the turkey bacon and chicken ham.
