  • 2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 egg
  • 1 tablespoon freshly grated ginger
  • 1/2 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, ground ginger, cinnamon, baking soda, and salt.
  3. In another bowl, cream the butter and brown sugar until fluffy.
  4. Add molasses, egg, and freshly grated ginger to the butter mixture and combine well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Form the dough into small balls and roll in granulated sugar.
  7. Place on a baking sheet lined with parchment paper and flatten slightly.
  8. Bake for 10-12 minutes until edges are firm.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, you can add chopped crystallized ginger to the dough.
