- 2 cups rice
- 1 tablespoon jerk seasoning
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can coconut milk
- 2 green onions, chopped
- 1 tablespoon olive oil
- Salt to taste
- Heat olive oil in a large pot over medium heat.
- Add the chicken thighs and brown on both sides.
- Remove chicken and set aside.
- Add onion, garlic, and bell pepper; sauté until softened.
- Stir in rice and jerk seasoning.
- Pour in chicken broth and coconut milk, then return chicken to pot.
- Bring to a simmer, cover, and cook for 20-25 minutes until rice is tender.
- Stir in green onions before serving.
