This One Pot Caribbean Jerk Chicken & Rice is a deliciously easy meal that’s bursting with flavor.

Ingredients

  • 4 pieces chicken thighs
  • 2 cups rice
  • 1 tablespoon jerk seasoning
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can coconut milk
  • 2 green onions, chopped
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken thighs and brown on both sides.
  3. Remove chicken and set aside.
  4. Add onion, garlic, and bell pepper; sauté until softened.
  5. Stir in rice and jerk seasoning.
  6. Pour in chicken broth and coconut milk, then return chicken to pot.
  7. Bring to a simmer, cover, and cook for 20-25 minutes until rice is tender.
  8. Stir in green onions before serving.

Notes

  • For extra heat, add more jerk seasoning to taste.
