A delicious and easy recipe for a one-pan lemon orzo and salmon dish, perfect for busy weeknights.

Ingredients

  • 1 cup orzo
  • 2 fillets salmon
  • 1 tablespoon olive oil
  • 1 lemon zested and juiced
  • 2 cups vegetable broth
  • 1 cup spinach
  • 1 teaspoon dried dill
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add orzo and toast for a few minutes until golden.
  3. Pour in vegetable broth, lemon juice, and zest. Bring to a boil.
  4. Reduce heat, cover, and simmer for 10 minutes.
  5. Add spinach and salmon fillets on top. Cover and cook for another 10 minutes until salmon is cooked through.
  6. Season with dill, salt, and pepper. Serve hot.
