  • 8 ounces ditalini pasta
  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups spinach, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the sausage and cook until browned.
  3. Add the onions, carrots, and celery; sauté until soft.
  4. Stir in the garlic and cook for an additional minute.
  5. Add the canned tomatoes, beans, broth, oregano, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  7. Add the pasta and spinach, cook until pasta is tender.
  8. Serve hot and enjoy!
