1 cup warm water
2 tablespoons granulated sugar
2 teaspoons kosher salt
2¼ teaspoons active dry yeast
4 cups all-purpose flour
½ cup baking soda
2 large egg yolks
1 tablespoon coarse sea salt
2 cups shredded cheese (cheddar or your choice)
Instructions
In a large bowl, combine warm water, sugar, and kosher salt. Sprinkle the yeast on top and let it sit for 5 minutes until frothy.
Add the flour to the yeast mixture and mix until a dough forms. Knead for about 5 minutes until smooth.
Cover the dough and let it rise for 1 hour until doubled in size.
Preheat the oven to 450°F (232°C).
Once risen, divide the dough into small pieces and shape them into bites.
In a large pot, bring water to a boil and add baking soda. Boil each dough bite for about 30 seconds, then remove and place on parchment-lined baking sheets.
Brush the bites with egg yolk and sprinkle with coarse sea salt.
Bake for 12-15 minutes until golden brown.
Serve warm with shredded cheese.
