  • 2 tablespoons granulated sugar
  • 2 teaspoons kosher salt
  • 2¼ teaspoons active dry yeast
  • 4 cups all-purpose flour
  • ½ cup baking soda
  • 2 large egg yolks
  • 1 tablespoon coarse sea salt
  • 2 cups shredded cheese (cheddar or your choice)

Instructions

  1. In a large bowl, combine warm water, sugar, and kosher salt. Sprinkle the yeast on top and let it sit for 5 minutes until frothy.
  2. Add the flour to the yeast mixture and mix until a dough forms. Knead for about 5 minutes until smooth.
  3. Cover the dough and let it rise for 1 hour until doubled in size.
  4. Preheat the oven to 450°F (232°C).
  5. Once risen, divide the dough into small pieces and shape them into bites.
  6. In a large pot, bring water to a boil and add baking soda. Boil each dough bite for about 30 seconds, then remove and place on parchment-lined baking sheets.
  7. Brush the bites with egg yolk and sprinkle with coarse sea salt.
  8. Bake for 12-15 minutes until golden brown.
  9. Serve warm with shredded cheese.
