- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 can pumpkin puree (15 oz)
- 2 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup cream cheese, softened
- 1/2 cup brown sugar
- 3/4 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup pecans, chopped
- Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared dish.
- In a large mixing bowl, combine pumpkin puree, eggs, sugar, vanilla, spices, and salt. Blend until smooth.
- In another bowl, beat the cream cheese and brown sugar until creamy, then add to the pumpkin mixture and mix well.
- Pour the filling over the crust and smooth the top.
- In a separate bowl, mix flour, oats, and chopped pecans to make the streusel topping. Sprinkle over the cheesecake filling.
- Bake for 40-45 minutes or until edges are set and the center is slightly jiggly.
- Cool at room temperature, then refrigerate for at least 4 hours before slicing.
Notes
- For extra sweetness, top with whipped cream before serving.
- Can be made a day in advance for best flavor.
