  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 can pumpkin puree (15 oz)
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/2 cup brown sugar
  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup pecans, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared dish.
  3. In a large mixing bowl, combine pumpkin puree, eggs, sugar, vanilla, spices, and salt. Blend until smooth.
  4. In another bowl, beat the cream cheese and brown sugar until creamy, then add to the pumpkin mixture and mix well.
  5. Pour the filling over the crust and smooth the top.
  6. In a separate bowl, mix flour, oats, and chopped pecans to make the streusel topping. Sprinkle over the cheesecake filling.
  7. Bake for 40-45 minutes or until edges are set and the center is slightly jiggly.
  8. Cool at room temperature, then refrigerate for at least 4 hours before slicing.

Notes

  • For extra sweetness, top with whipped cream before serving.
  • Can be made a day in advance for best flavor.
