Ingredients

  • 2 sweet potatoes
  • 2 chicken breasts
  • 4 cups kale
  • 1 cup rice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes.
  4. While the potatoes are roasting, cook the rice according to package instructions.
  5. Season the chicken breasts and grill or pan-sear until cooked through.
  6. In the last 5 minutes of cooking the potatoes, add the kale to the baking sheet to wilt.
  7. Assemble the bowls by layering rice, chicken, roasted sweet potatoes, and kale.

Notes

  • For extra flavor, marinate the chicken in your favorite spices beforehand.
