  • 2 ripe mangoes, diced
  • 1 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • Olive oil for grilling

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the mangoes, red onion, jalapeño, lime juice, and cilantro. Mix well and set aside.
  3. Season the salmon fillets with salt and drizzle with olive oil.
  4. Place the salmon on the grill, skin-side down, and cook for 6-8 minutes.
  5. Flip the salmon and cook for an additional 4-5 minutes, or until cooked through.
