A simple and delicious skillet dish featuring tender chicken, fresh zucchini, and squash, all enhanced with lemon and parmesan.

Ingredients

  • 4 boneless chicken breasts
  • 2 medium zucchinis
  • 2 yellow squashes
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken breasts and cook until golden brown, about 5-7 minutes on each side.
  3. Remove chicken and set aside.
  4. Add zucchini, squash, and garlic to the skillet. Sauté for 3-4 minutes.
  5. Stir in lemon juice and zest, salt, and pepper.
  6. Return chicken to the skillet, sprinkle with parmesan, and cover to cook for another 5 minutes.

Notes

  • For added flavor, marinate the chicken in lemon juice and herbs for a couple of hours before cooking.
