  • 3 pounds corned beef brisket
  • 4 cups chopped cabbage
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 1 onion, chopped
  • 4 cups beef broth
  • 2 tablespoons mustard
  • 1 teaspoon black pepper

Instructions

  1. Place the corned beef at the bottom of the slow cooker.
  2. Add the chopped vegetables on top of the meat.
  3. In a separate bowl, mix the beef broth with the mustard and black pepper. Pour it over the meat and veggies.
  4. Cover and cook on low for 8-10 hours or high for 4-5 hours.
  5. Once cooked, shred the corned beef and mix with the vegetables before serving.

Notes

  • For an extra kick, add a few bay leaves or cloves to the broth.
  • Leftovers taste even better the next day.
