  • 4 boneless, skinless chicken breasts
  • 6 strips turkey bacon
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup spinach, fresh
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. In a slow cooker, place the chicken breasts at the bottom.
  2. Cook the turkey bacon until crispy, then crumble it over the chicken.
  3. In a bowl, mix together the heavy cream, chicken broth, sun-dried tomatoes, garlic, basil, and oregano; pour over the chicken.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, stir in the fresh spinach and Parmesan cheese.
  6. Serve over pasta or rice as desired.
