- 2 pounds chicken thighs
- 1/2 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1 tablespoon water
- 3 cups mixed vegetables (carrots, broccoli, bell peppers)
- In a bowl, mix honey, soy sauce, and garlic.
- Place chicken thighs in the slow cooker and pour the honey mixture over them.
- Add mixed vegetables on top.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Mix cornstarch and water, then stir into the slow cooker 30 minutes before serving to thicken the sauce.
- Serve warm.
Notes
- For extra flavor, add ginger to the sauce.
